Cashew Parmesan is the perfect addition to pasta, pizza, salads, and more. It's nutty, cheesy, and gives every dish an extra pop of flavor. Plus, it's ridiculously easy to make!
Parmesan cheese used to be a staple in our house. I used to love the super salty, nutty flavor it gave everything you put it on - from spaghetti to salad, it seemed to make the dish. Fast forward to keeping dairy out of our house, and we rely heavily on this Cashew Parmesan to satisfy our salty, cheesy parmesan needs!
One of the things I love about this recipe is that it literally takes 5 minutes to make, maybe less. All it requires is cashews, nutritional yeast, garlic powder and salt. That's IT. It really is a staple in our kitchen, and it keeps indefinitely in an airtight container, no need for refrigeration.

Now, Let's Make Cashew Parmesan!
Step 1. Pull out your food processor, or blender if you don't have one. Measure out your cashews, nutritional yeast, garlic powder and salt. Regarding the kind of cashews you need, I like to use roasted unsalted cashews for this recipe. They tend to grind into a lighter consistency easier than raw cashews, are typically less expensive, and provide a nuttiness that raw cashews don't have, since the roasting brings out the flavor.
Step 2. Add all ingredients to your food processor and blend with 5-second long pulses, 3-4 times; about 15-20 seconds total. If you like some substance to chew on, you can do 2 pulses instead so there are more chunks of cashews.
Step 3. Add to anything you would put parmesan cheese on; I love combining it with equal parts Panko breadcrumbs and adding it to my Creamy Spinach and Artichoke Dip before baking! Store in an airtight container at room temperature for up to 2 weeks.

Recipe for Cashew Parmesan
Time: < 5 minutes
Difficulty: Very Easy
1/2 cup cashews I prefer roasted unsalted
2 Tbsp nutritional yeast
1/2 tsp garlic powder
1/4 tsp sea salt
Add all ingredients to food processor. Blend with 5-second long pulses until fully combined; about 3-4 pulses. For a chunkier consistency, pulse 1-2 times only.
