Essential Cashew Cream Recipe

This cashew cream is deemed as an 'essential' addition to your kitchen repertoire simply because it's used as a crucial base in so many delicious recipes. It's easy to make, and adds a creaminess to any dish that will make you second guess whether there's dairy involved!


Cashew cream is one of those staples for a successful plant-based diet that cannot be replaced. It's the food equivalent of duct tape, in my opinion, where it just seems to tie everything together so nicely.


I've listed two ways to make this cashew cream: sweet and savory. I use it mostly as a savory addition to pastas, dips and sauces, but if you remove the spices and add some sweet elements, you can easily transition it to a sweet cashew cream that can be used for desserts!


It's incredibly versatile, and can even be made into cashew cheese... but that's a (delicious) recipe for another day!

I'm excited for you to try it because I think you'll be amazed at how it can make a dish go from 'eh' to 'WOW', just by adding it in! Take my Creamy Spinach and Artichoke dip, for example. It's not much before adding in the cashew cream, but after you do, it takes on a whole new element reminiscent of gooey, creamy, cheesy dip that you'll want to snack on over and over again.

Now, Let's Make Essential Cashew Cream!


Step 1. Soak raw cashews overnight, if possible. This allows the nuts to become as soft as they can be, which will help make the smoothest cream. If you don't have 8+ hours on your side to soak, you can either boil them for 10 minutes and let them cool slightly before blending, or soak for at least 4 hours. This will at least ensure they are able to be blended without leaving any pulp residue.


Step 2. Add softened cashews to high-speed blender or food processor along with lemon juice, salt (less if making sweet), apple cider vinegar, water (depending on the consistency you'd like), and your sweet or savory ingredients. If you want it to be sweet, add maple syrup and vanilla extract. If you want it to be savory, add nutritional yeast, garlic powder, paprika and pepper.


Step 3. Blend on high for 15-20 seconds, or until creamy and well-incorporated.

Recipe for Essential Cashew Cream


Time: 5 minutes not including time to soak or boil cashews

Difficulty: Easy


Savory Cashew Cream

  • 1 cup raw cashews soaked overnight

  • Juice of 1 lemon about 2 Tbsp

  • 2 Tbsp nutritional yeast

  • 1 tsp garlic powder

  • 1 tsp apple cider vinegar

  • 1/2 tsp sea salt

  • 1/4 tsp paprika

  • 1/8 tsp pepper

  • 1/4-1/2 cup water start with 1/4 c and increase by Tbsp for desired consistency

Sweet Cashew Cream

  • 1 cup raw cashews soaked overnight

  • Juice of 1 lemon about 2 Tbsp

  • 2 Tbsp maple syrup

  • 1 tsp vanilla extract

  • 1/8 tsp salt

  • 1/4-1/2 cup nut milk or water start with 1/4 c and increase by Tbsp for desired consistency

Directions

  1. Soak raw cashews overnight in refrigerator. Drain, rinse, and add to high-speed blender.

  2. Add lemon juice and your choice of sweet or savory ingredients, listed above.

  3. Blend on high for 15-20 seconds, or until smooth. Use immediately in your dishes, or store in airtight container in the fridge for up to one week.
