Vegan Rice Krispies Treats

These Vegan Rice Krispies Treats are deliciously reminiscent of the classics, are the perfect treat to share with friends and family, and take less than 20 minutes to make!



We all know the experience of opening the crinkly blue packaging of a Rice Krispies Treat. The first thing that hits you is that iconic smell - sweet (almost too sweet), mouth-watering goodness, just waiting for that first bite. The crunch, then the chew, then the silky marshmallowy feeling that takes over every corner of your mouth. MMM!


Whether you've quit or reduced your intake of dairy or animal products since having this experience, or you're just looking for a healthier version of the classic treat, have I got the recipe for you...

Using plant based substitutes to make this recipe is so simple, and you can get really creative with the add-ins!


For example, you can make S'mores Rice Krispies Treats by adding some vegan chocolate and crushed graham crackers into the marshmallows.


Make Oreo Rice Krispies Treats by adding crushed Oreos into the marshmallows.


Make colorful Unicorn Rice Krispies Treats by adding sprinkles and some fun food coloring to the marshmallows...

Now, Let's Make Vegan Rice Krispies Treats!


Step 1. Line a 9x9 baking dish (if you like thicker treats; if you want thinner ones, use a rectangular dish) with parchment paper and lightly grease the paper with a nonstick spray.


Step 2. In a large pot over medium-low heat, add 3 heaping tablespoons of plant based butter (such as Earth Balance). After the butter has melted, add 2 bags or 20 ounces of Dandies® Vegan Vanilla Marshmallows and stir continuously. You can increase the heat a little if you need to speed up this process; just be sure you turn it back down once the marshmallows have fully incorporated and are no longer lumpy.


Step 3. To the marshmallows, add 1 tsp vanilla extract and 1/4 tsp sea salt and stir well. Once the marshmallows have melted into a smooth, silky fluff, turn off the heat on your stove and add 6 cups rice puff cereal, and stir with a strong silicon spoon or spatula. This will make for an easy cleanup. Marshmallows can be a bit... sticky ;)


Step 4. After fully incorporating the rice puff cereal into the marshmallow fluff, spoon the mixture into the prepared baking dish. Don't flatten the mixture too much as you want them to be light and airy, not dense and tough. Gently glide your spatula over the top of the mixture to ensure all crevices of the dish are filled, and the top is relatively smooth.


Step 5. Let cool at room temperature for at least 20 minutes, or refrigerate for 10 minutes. Lift the parchment paper out of the dish and cut into squares. If refrigerated, let the treats come to room temperature before enjoying them. Store in an airtight container at room temperature for up to one week.

Recipe for Vegan Rice Krispies Treats

  1. Line a 9x9 baking dish with parchment paper and lightly spray paper with nonstick spray.

  2. In a large pot over medium-low heat, melt butter. Increase heat to medium and add marshmallows and stir until smooth with no lumps. Add vanilla extract and salt, and stir. Turn off heat and add rice puff cereal. Stir with strong silicon spatula (for easy cleanup) until fully incorporated.

  3. Spoon mixture into prepared baking dish, lightly spreading and gently flattening into corners. Do not press too hard, otherwise they will be too dense. Cool in fridge for 10 minutes, or at room temp for 20 minutes, before lifting paper out of pan and cutting into squares. Let the squares come to room temp before enjoying!

  4. Store in airtight container at room temperature for up to one week.

Notes

  1. For thinner squares, use a rectangular baking dish.

  2. To make S'mores treats, add crushed graham crackers and chocolate. For Oreos® treats, add crushed chocolate sandwich cookies. For funfetti unicorn treats, add rainbow sprinkles and/or food coloring.
